Nothing beats homemade scones with jam and tea

When we first came to the Tablelands to search out our B&B venue, relatives of Mark in Townsville treated us to a posh weekend at Crater Lakes Rainforest Cottages – a rather fabulous set of individual units set in amongst the trees. The welcome included a Devonshire tea which was such a lovely touch that I determined to introduce the same thing at the Curtain Fig. Accordingly, all our guests are welcomed with homemade scones, fresh cream and strawberry jam – and when my newly planted strawberries do their stuff, the jam will be home made too.

The best so far has been lemonade scones – easy, simple and very reliable – but I continue to hunt for the ultimate scone recipe. Mark has become a tasting stalwart, bravely checking out every batch and providing marks out of ten (and, of course, checking them again daily as long as the batch lasts for consistency and longevity).

There is something rather wonderful about surprising guests with a small plate of homemade fare and seeing their eyes light up, especially after a long car journey. Pretty soon the kettle in the room goes on and tea or coffee is enjoyed with scones and jam. Each room has a patio table and chairs outside and often there will be several tables of guests chatting and laughing and starting to unwind.
